Next, the coffee roasting machine goes through a second crack and the color of the coffee beans changes to medium-dark brown and the second pop is much faster and there is present an oily sheen on the beans.
Roasting allows for maximizing the potential of espresso and there is also maximum sweetening as well as aroma to the coffee and much reduced bitterness as well as acidity.
